Pineapple Banana Fruit Leather

My mom used to make fruit leather when I was growing up.  We lived in an area of well kept orchards bearing all kinds of fruits.  She bought fruit from the local farmers markets and processed it herself.  Autumn was always the best time of year for this reason.

I do a simpler version of this with fruit purchased from the store…sometimes already processed (canned).  I have a difficult time finding the produce I want from the farmers markets here in Central Florida.  Most of the produce comes from Georgia…why not just go to the grocery store…  I have a food dehydrator, but I think you can find info on how to do this in your oven (Google knows everything).

Here is the secret…instead of spraying your leather trays or baking pans with non-stick spray, brush them with coconut oil.

The flavor of the coconut goes great with pineapple and banana!

I put 1 can of crushed pineapple and 4 ripe bananas in the blender.

Make sure you get this very smooth, no chunks!  This made 5 cups…

   …and filled 2 trays.  Notice the pale yellow color and smooth texture.

 

 

 

I had extra bananas so I cut them up and brushed coconut oil on the dehydrator trays.  This was my favorite snack growing up!  Dehydrated bananas are chewy compared to (fried) banana chips that you buy at the store.  Line up the banana slices on the trays and dry them.

It took 6 1/2 hours for the bottom tray of leather and almost 8 hours for the second and the bananas.  While everything is still warm, loosen the edges with a spatula and peel the leather off the tray.  Cut into 4 pieces and roll them up…or not :-).  The bananas are wonderful by the way.
